Lentil Soup
Ingredients
- 2 large carrots
- 2-4 sticks of celery
- 1 yellow or red onion
- 3 or 4 cloves of garlic
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp of basil
- 1 tsp of thyme
- salt & pepper
- 24 oz of diced tomatoes (or 3 roma tomatoes)
- 7 cups of water
- 1.5 cups of green or brown lentils
- 1 lemon
- 4-6 leaves of kale
Instructions
- Peel carrots, then slice length wise and dice
- Slice and dice celery
- Slice and dice onion
- Place 1 cup of water into pot on medium heat, once warm add veggies
- Cook veggies for 5 minutes
- Add the cloves of diced garlic, and spices
- Cook for another 2 minutes
- add diced tomatoes, and 6 cups of water
- Add lentils
- Stir pot and bring to a boil
- Then cover pot and let simmer for 25-30 minutes
- Squeeze lemon juice
- Chop kale
- Add lemon juice and kale, then stir for another minute to soften kale
