Lentil Soup

2 carrots
2 sticks of celery
1 yellow or red onion
1/4 cup of oil
3 or 4 cloves of garlic
2 tsp cumin
1 tsp oregano
1 tsp of basil
1 tsp of thyme
(or 3 tsp of italian seasoning in place of the oregano, basil, and thyme)
salt & pepper
24 oz of diced tomatoes
6 cups of water
1.5 cups of green or brown lentils
1 lemon
3-4 leaves of kale

Peel carrots, then slice length wise and dice
Slice and dice celery
Slice and dice onion
Place 1/4 cup of oil into pot on medium heat, once warm add veggies
Cook veggies for 5 minutes
Add the cloves of diced garlic, and spices
Cook for another 2 minutes
add diced tomatoes, and water
Add lentils
Stir pot and bring to a boil
Then cover pot and let simmer for 25-30 minutes
Squeeze lemon juice
Chop kale
Add lemon juice and kale, then stir for another minute to soften kale
