Cashew Queso

Ingredients
- 2 cups of cashews
- 1.5 cups of hot water
- 1/2 cup of nutritional yeast
- 1 tomato
- 3 garlic cloves
- 1 tsp salt
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp onion powder
Instructions
- Soak cashews in water for about 1 hour (optional)
- Roast tomato and garlic cloves at 400 degrees for 15 minutes (optional)
- Place cashews, hot water, nutritional yeast, and spices into blender and blend until smooth
- Add tomato and garlic
Cashew queso is best served warm. If it needs to be reheated, it's best to do so on the stove rather than a microwave.
