Cashew Queso

Tools

• Blender
• Oven (optional)

Ingredients

• 2 cups of cashews
• 1.5 cups of hot water
• 1/2 cup of nutritional yeast
• 1 tomato
• 3 garlic cloves
• 1 tsp salt
• 1 tsp cumin
• 1 tsp chili powder
• 1 tsp onion powder

Instructions

• Soak cashews in water for about 1 hour (optional)
• Roast tomato and garlic cloves at 400 degrees for 15 minutes (optional)
• Place cashews, hot water, nutritional yeast, and spices into blender and blend until smooth
• Add tomato and garlic

Cashew queso is best served warm. If it needs to be reheated, it's best to do so on the stove rather than a microwave.
